Introduction
Delicious and healthy banana muffins. They are moist and fluffy at the same time. Delicious and healthy banana muffins. They are moist and fluffy at the same time.Number of Servings: 24
Ingredients

1/4 cup coconut oil
1/4 cup apple sauce
1 cup brown sugar
2 egg whites
3 lg bananas (mashed)
1tsp lemon juice
1 cup whole wheat flour
1 cup white flour
1/2 cup oatmeal
4 tbls wheat germ
3 tsp baking powder
1/4 tsp salt
1/4 cup chopped walnuts
Directions
Cream together coconut oil and sugar.
Add apple sauce.
Beat egg whites until light and fluffy.
Add mashed bananas and lemon juice.
Blend until creamed.
Add all dry ingredients.
(I just mix everything in a food processor starting with the wet ingredients and then add the dry.)
Pour into greased and floured muffin tins. (I use the spray)
Bake 10 min in a 350 degree oven.
Makes 24 muffins.
You can omit the coconut oil and use just applesauce if you wanted a lower fat version.
