Ingredients

    1 can (15 oz.) black beans, rinsed and drained
    1 cup diced mango
    1 Roma tomato, diced
    1/2 cup orange bell pepper, diced
    1/2 cup yellow bell pepper, diced
    1/4 cup onion, diced
    1 Tbsp jalapeņo pepper, minced
    1 Tbsp fresh cilantro
    1 Tbsp minced garlic
    2 Tbsp lime juice
    1 Tbsp red wine vinegar
    1/8 tsp salt
    1/8 tsp black pepper

Directions

In a bowl, mix beans, mango, tomato, bell peppers, onion, jalapeņo, cilantro, garlic, lime juice, and vinegar. Add salt and pepper and stir. Serve, or cover and chill up to 1 day.

    I didn't know I liked Mangos till I tried a salsa like this. Good stuff! I didn't add all the spices, but we are simple that way. - 2/27/11
