Ingredients

    1 block extra firm tofu, cubed
    1 diced onion
    .5 cup diced celery
    2 garlic cloves crushed
    .5 cup diced red pepper
    1 tsp salt
    1 tsp pepper
    2-3 tbsp chili powder
    .5 tsp cumin
    1 lg can diced tomatoes (more if desiered)
    .5 can tomato paste
    1 can kidney beans (can also use black beans)
    1 tsp olive oil

Directions

heat pot, add oil onion and tofu. cook on med heat for 5 min. add garlic and all seasonings. cook and stir until well blended. add celery, peppers, tomatoes, beans and tomato paste. simmer on low heat, stirring occasionally, until thick, about 75 minutes. add hot pepper flakes to taste before serving if desierd. makes 6 servings.

    For more spice can use 1 can rotel tomatoes and chilis and one 15 oz can diced tomatoes. also, using tofu that's been frozen and thawed can lend a "meatier" texture. - 3/30/10
