Ingredients

    Chicken Breast, no skin, 4 breast, bone and skin removed slices
    Old El Paso enchilada sauce 14 oz can
    Tomato Paste, 1 can (6 oz)
    Mushrooms, cooked, 3 mushroom sliced
    Onions, raw, .5 medium (2-1/2" dia) sliced
    Sweet potato, with skin, diced 1 medium (2" dia, 5" long, raw)
    1 1/2 cup cooked rice
    2 cans of water (use enchilada sauce can)


Directions

Slice up chicken and put in a coated pot heated on high. Cook till half of meat is cooked. Add onions and mushrooms and leave alone while you dice up sweet potato. Add in sweet potato, mix and cover. Turn heat to med-low. When Potato is half wat tender add paste and sauce along with water. When starts simmering add rice. Heat through and you're done.
