    1 clove garlic - sliced
    1.5 cm root ginger peeled and chopped
    1/2 green chilli deseeded and chopped
    2 crushed cardamom pods
    2 curry leaves
    100g cherry tomatoes - halved
    160ml coconut milk
    200g prawns
    250g spinach - fresh


makes 2 generous servings
add garlic, ginger, curry leaves and cardamom to oil and heat
add tomatoes and cover with spices mix
add coconut cream and simmer for 1 mins
add prawns and spinach and simmer gently until prawns cooked through and spinach wilted

serve with rice
