Introduction

Sliced and stored in plastic wrap, this makes a great snack-on-the-go. Or, served with beans and salsa, it is a great lunch. Sliced and stored in plastic wrap, this makes a great snack-on-the-go. Or, served with beans and salsa, it is a great lunch.

Ingredients

    1/2 cup onion, diced
    2 tsp olive oil
    3 cups zucchini, grated
    2 cups oats
    1/2 cup wheat germ
    1/2 cup roasted sunflower seeds
    1/4 tsp salt (not necessary if using salted sunflower seeds.)
    2 large eggs, beaten
    1/4 cup swiss or cheddar cheese, grated

Directions

SautÚ onions in olive oil on low heat until translucent. Meanwhile, combine zucchini, oats, wheat germ, sunflower seeds and salt; mix well. Add eggs and onions, mix well. Top with cheese. Place into a greased loaf pan and bake at 375║ for 30 minutes.
