Ingredients

    Roasting Chicken, whole raw 1600grams
    *Basil, fresh, 2 gram(s)
    *Sage, Fresh 1 Tbsp or 2g, 1 serving
    *Herbs- Lemon/Thyme/Basil - G Fresh 120g, 2 gram(s)
    *Garlic, Fresh (1 clove), 20 gram(s)
    *Wine, White Wine, Pinot Gris, 30gm
    *fresh red chilli, 1 serving
    *Lime, Fresh 1 medium, 1 serving
    *Dark Brown Sugar, Pure Cane Sugar, .1 tsp
    Water, tap, 1 cup (8 fl oz)
    *Mustard -- Wegman's Dijon Whole Grain Mustard, 1 tsp

Directions

Recipe uses one whole chicken and makes 4 x 400gm servings, chop herbs and chilli finely and mince garlic.

Mix in mustard, everything except water. Loosen the skin from flesh, remove any excess fat.

Make incision in the chicken and then spread herb/chilli mix between the chicken flesh and skin.

Place chicken in roasting tray and then add water.

Roast chicken in a medium hot oven until the juices run clear.
