Introduction

Number of Servings: 36

Ingredients

    1 can(8oz) crushed pineapple, drained
    1/2 cup shortening
    1 cup brown sugar, packed
    1 large egg
    1 tsp. vanilla
    2 cups unbleached flour
    1 1/2 tsp baking powder
    1/4 tsp salt
    1/4 tsp baking soda

Directions

Drain pineapple and set aside. In a mixing bowl, cream together shortening, and brown sugar . Add egg and mix until fluffy. Add vanilla and pineapple, mix well.

In an another bowl stir together the dry ingredients. Stir into pineapple mixture. Drop by the teaspoonful onto greased baking sheets. Bake in a preheated 325 degree oven for 17 to twenty minutes or until lightly golden. Remove to racks immediately. Store in plastic bags or containers.

Yield: 3 dozen.
