Our favorite chili recipe!
We substitute venison when we can because it is much more lean than ground beef.
(we omit the cumin, cocoa, & red pepper sauce)

Number of Servings: 4

Ingredients

    1 lb. ground beef (or ground venison)
    1 large onion, chopped
    2 cloves garlic, cruched
    1 Tblsp chili powder
    1/2 tsp salt
    1 tsp dried oregano leaves
    1 can (16 oz.) whole tomatoes, undrained
    1 can (15 1/2 oz.) red kidney beans, undrained

Directions

Cook beef, onion, & garlic in a 3 qt. sauce pan until beef is brown. Stir in remaining ingredients EXCEPT beans; break up tomatoes. Heat to boiling; reduce heat & simmer for one hour.

Stir in beans. Heat to boiling again; reduce heat & simmer for additional 20 mintues.

    I've been making this recipe for years. Tried others and this is the one I always come back to. My family loves it. Sometimes I substitute corn for beans. - 11/19/13
