Ingredients
-
1 lb Ground turkey 93-97% Fat Free
1 Bottle 32 oz V-8 Low Sodium Juice
1 cup fresh mushrooms, chopped
1 cup onion, chopped
1/2 cup green peppers, chopped
1/4 cup red peppers, chopped
chili powder or chili seasoning (watch sodium)
3 stalks celery chopped, yields about 1 cup
1 cup uncooked Lentils, will yield about 2 cups when cooked
Add jalapenos if you like it spicey (not included in the nutirional information here since they are optional).
Skip the cheese, sour cream, pasta and oyster crackers and this makes a very healthy meal.
Directions
Cook Turkey and pour into slow cooker after draining, if necessary.
I do not precook the lentils because they seem to cook just fine in the slow cooker if you plan on slow cooking the chili for at least 6 hrs. If you plan to serve it sooner then I would suggest precooking the lentils or they will be hard.
Put all items in a slow cooker and cook on low for 4 hrs and switch to high the last 2 hrs.
Add pepper and other seasoning to taste
