Ingredients

    15 ounce can of black beans, drained and rinsed
    9 ounces cubed, leftover turkey
    1/4 cup chopped onion
    1/2 cup salsa
    1/4 cup reduced fat sour cream
    2.5 ounces reduced fat cheddar, shredded
    2 cups green chile enchilada sauce
    6, 8-inch flour tortillas

Directions

Pre-heat oven to 350 degrees.
In a mixing bowl, combine first 6 ingredients. Divide mixture evenly, in the center of each tortilla. Roll tortillas and mixture into a "log".
Pour 1/2 cup of enchilada sauce in the bottom of a 9x13 baking dish. Place rolls on top of the sauce. Pour remaining sauce over the rolls.
Bake for 30 minutes.

    Really, really good. Will save this one and make again. Used pinto beans (because it's what I had on hand). Even my picky 11-year old liked it! I'll follow the suggestion from someone else and freeze leftovers! - 11/28/11

    Couldnt find green chile sauce so used additional salsa. Came out great. Froze leftovers for lunch - 1/5/11
