Ingredients

    1 large bag of baby spinach (8 cups)
    2 cups sliced mushrooms
    1 cooked box of wild rice
    6 wedges of laughing cow light swiss cheese

Directions

Cook rice without butter or oil according to box directions. In the microwave place spinach and cook for 3 minutes on high, add mushrooms and cook on high for 2 minutes. Chop with chopper in bowl. Add wedges of cheese cut up and mash in with spoon or fork. Stir in cooked rice. Spread in 9 x 13 pan. Makes 6 servings.
