Ingredients

    Neufchatel Cheese (reduced fat cream cheese), plain, non-fat yogurt, black beans (canned), scallions (green onions), frozen sweet corn, taco seasoning, spinach, reduced fat cheddar cheese

Directions

Preheat the oven to 350.

Blend Neufchatel Cheese and yogurt together using a fork or wisk (bring cheese to room temp first to make this easier). Add taco seasoning and hot sauce if desired, and stir until blended. Stir in pureed spinach (pureeing is very important). Drain canned beans and add beans and frozen corn to the mix. Shred 1/2 the cheese and stir into the mixture. Chop scallions finely and add to mixture. Pour the mixture in to 9x9 glass pan. Shred the remaining cheese on top of the mixture. Bake for about 25 minutes or until the cheese is hot and bubbly.

Makes about 8 servings. Serve with tortilla chips (baked or not, your choice).
