Introduction

Ingredients

    1/2 cup cooked brown rice
    canola non stick spray
    2 scrambled egg whites
    3 T salsa

Directions

I had cooked some brown rice and thought it would be good with some fresh salsa that I bought. As I was thinking about making breakfast, I realized that I really needed the protein and was thinking what is the lowest calorie way to get that and my go to protein was it. Egg whites. So I scambled the egg whites and cooked in the microwave for about 2 minutes in a bowl sprayed with canola non stick spray. I broke this up and mixed into the brown rice and put the salsa on top. Stirred it all together. Very satisfying breakfast!

My prep time and cooking time are presuming that the rice is already cooked.
