Ingredients

    2 small cucumbers, unpeeled and thinly sliced
    1 medium red or white onion, thinly sliced

    For the Dressing:
    2 tablespoons EVOO
    2 tablespoons Alessi® Orange Blossom Honey Balsamic Vinegar
    2 teaspoons Splenda
    1 teaspoon Gourmet Sea Salt
    Pepper, to taste

Directions

1. In a medium bowl, combine cucumber slices and onion slices; set aside.
2. In a small bowl combine remaining ingredients to make the salad dressing.
3. Add the salad dressing to cucumber/onions and toss well.
4. Cover and refrigerate for up to 2 hours.

    I made this salad and threw in a few cherry tomatoes I had for color. Both my husband and I enjoyed it and I will be making it again! - 7/24/17
