Introduction

This is a soup prepared by mother and grandmother for me as a child. Happily my children enjoy it as much as I do.

The vegetables and meat can be varied depending on preference and what is in the refrigerator.

Number of Servings: 8

Ingredients

    8 cups of water
    1.5 cups of carrots, chopped
    1 cup of celery, chopped\
    .25 cup of sweet red pepper, chopped
    8 oz of lean ground beef (or left over meat)
    1 box of Honig Vegetable Soup Mix

Directions

If using raw meat, brown it in a large pan. Add water and place on the stove to boil. If using cooked meat, add it to the boiling water. Add vegetables and return to a boil. Turn the heat down and simmer for 50 minutes. Add a box of soup mix and stir to mix. Return to boil for 10 minutes.

Makes 8 servings.

Our family likes this meal with biscuits or cornbread.
