Ingredients

    2 lbs of Chicken breast of thigh (no bones or skin)
    2 cups of Salsa
    1 Can Corn (15 1/4 oz)
    1 Can Diced Tomatoes and Green Chile (10 oz)
    1 small raw onion, chopped
    Onion powder, Red Pepper, Chili powder, Garlic powder, Cumin, and Ground Oregano added to taste.
    (I added 1/8 tsp of each to the nutritional calculator.)

Directions

Place chicken in the slow cooker.
Add spices on top of chicken.
Add raw onion.
Pour corn, salsa, tomatoes and green chili over chicken.

Cook on Low for 7-8 hours.

You can serve on top of rice or beans or inside a burrito with a dash of low-fat sour cream.

    Awesome, I cooked in a exlarge fry pan on top of stove. I cooked chicken and spices, then added the rest served over egg noodle yolk free of course. - 3/16/10

    Incredible!
    Very good base recipe. I added a dash of chipotle ground pepper, used fire roasted tomatoes, and (because I had some already chopped) walla walla onions and fresh red peppers. Love how easy this recipe is (you can use frozen chicken) and even without the "extras," it was still a flavorful meal. - 8/9/10
