Introduction

I saw a recipe for these with dairy here on Sparks. But since I and 2 of my children are intolerant to dairy I made some changes. We put fresh peach-butter on them and they were wonderful. Ingredients

    1 C steel cut oats
    1/2 C organic dairy free soy milk
    3 large eggs

Directions

Take all ingredients and put them in your blender. Blend till smooth. Pour into hot skillet with a little oil and cook till done.
Nutritional info is per pancake.
Top with whatever you like but be sure to add that to the nutritional info.

I am going to experiment with almond and rice milk since we really do not like to use much soy. That should not change the flavor but might change the nutritional info.
