Introduction

This is a fast and super delicious stew that tastes slow roasted, feels wonderfully comforting, and gives the (false) impression of being VERY indulgent. Italian sausages, salami, tomatoes and lentils are simmered together to form an excellent winter one-pot meal.

This is adapted from Nigel Slater's "The Kitchen Diaries" to be lower fat by using turkey or chicken sausages and not using oil to saute the onions.

Ingredients

    3 Turkey or Chicken Spicy Italian Sausages (I got mine at whole foods)
    4 Oz Salami--
    2 Onions
    2-3 Garlic Cloves
    15 oz Can crushed tomatoes
    2 cups water
    3/4 cup green or brown lentils, cleaned
    3 Bay leaves

Directions

Chop your onions and saute them in a stock pot or dutch oven sprayed with oil spray. Thinly slice the garlic cloves and add, making sure that they don't burn. Slice the salami in strips and add to the onions. Add the tomatoes to the pot, followed by your clean lentils and 2 cups of water and lower the heat to medium-low.

Brown the sausages in another pan and after about two minutes, slice them in half and add to the pan, making sure they are covered by the tomato mix. Add the 3 bay leaves and cover, stirring every 5 or 10 minutes. When the lentils are soft (about 30 minutes), you're ready to tuck in! enjoy!
