Introduction
The bulgar adds a more meaty texture to this fast throw-together in the morning and come home to dinner dish. Great for those super crazy days. Ingredients
-
Kroger Fiesta Style Vegetables, 12 serving (2 bags)
Kroger 3 pepper and onion blend, 1 bag (5 srvg)
Hominy, 2 cans (one yellow & one white)
Beans, black, 1 cup
Beans, red kidney, 1 cup
Canned Crushed Tomatoes, 4 can
Tomatoes, canned, with green chilies, 1 can
Bulgur, dry, 1/2 cup
Seasonings: Chili Powder, Salt, Black Pepper, Red Pepper flakes, Cardomon, Cumin, Corriander, Oregano, to taste
Directions
Combine all ingredients in large slowcooker. Cook on high 4 or so hours or on low 8 or so, until bubbly and cooked thru.
Note: I use beef broth for a bit of a meaty flavor but you can substitiute vegetable broth for a true vegatrian dish. You can also change up the veggies and beans to what you have on hand or prefer. You can substitue corn for the hominy. I like bulgar in non-meat chilis but you can substitute rice or barley for a more meaty texture or leave it out and cut back on the broth.
