Ingredients

1 1/4 c. puffed rice (or crumbled rice cakes!)
1 c. almond meal (by-product of making almond milk)
3 tbsp. flax seed
1/4 c. finely chopped walnuts
1/4 c. finely chopped dried fruit (apples, rasins...)
1/4 c. honey
2 tbsp. brown sugar
1 tsp. vanilla extract (or try lemon extract)
1/2 tsp. cinnamon (optional)
Directions
1. mix first 5 "dry" ingredients in a bowl, set aside.
2. put honey & brown sugar in a small saucepan. Using medium/high heat, bring to a boil, stirring constantly.
3. Remove from heat. Add vanilla & cinnamon to syrup.
4. While syrup is still hot, mix it into dry ingredients.
5. Press mixture into a 8x8 pan sprayed with cooking oil. Use a piece of waxed paper to press.
6. Cool on a wire rack.
7. Cut into 9 squares. Wrap individually in waxed paper & store in tupperware.
