Introduction

Ingredients

1/2 package of Smoked Turkey Sausage (or any kielbasa/sausage)
1/2 lb of ground turkey
1/2 medium head of cabbage
1 Can of beef broth
1 can of Kidney beans
Garlic, salt, pepper and red wine vinegar to taste
Directions
This recipe makes about 6-7 bowls (1.5 cups) of soup depending on how rich you want the broth.
Starting with a large stock pot empty the broth (plus 3 cans of water), Kidney beans (with liquid) into the pot. Bring to a simmer while you cut and cook everything else.
Brown the ground turkey and then place it into the pot with the liquids.
Cut the Turkey Sausage in half then cut into small pieces and sauté with the mushrooms. I used red wine vinegar to deglaze the pan and give the soup a bit of twang.
After emptying the same skillet of the mushrooms and sausage coarsely chop the cabbage and place it in the pan to brown it a little and give it some crispness.
The browning of the cabbage gives this soup an incredible flavor that I can't get enough of.
Toss everything into the stock pot and bring it up to a boil for about 5-10 minutes or until the cabbage is to your tenderness liking.
With about 150 calories a bowl you can't go wrong with this!
You have a base to add or take away anything that you want with this soup.
