Introduction

Ingredients

    8 oz Rotisserie Chicken (no skin)
    1/4 c. Green or Red Pepper
    1/4 c. Chives or Onions
    1 Can Enchilada Sauce
    1 Can 98% fat free Cream of Chicken Soup
    1 Can Black Beans (I used 2 cups, after prepared from dry)
    1 C. frozen Corn
    1 Can Diced Tomatoes with Chillies
    2 C. Skim Milk
    (recipe called for 1 c. Cheddar and 1 c. Monterey Jack)
    but, to save some calories, I used:
    3/4 c. Mozzarella (heaped)
    1/4 c. Cheddar (slightly less)

Directions

Add all ingredients, except cheeses. Add cheese right before serving. If desired, may top with tortilla chips. Makes 10, 1 cup servings. I also added another cup of water, for more volume.
