Ingredients

6 tbsp olive oil
1 med sweet onion
1 med portabello mushroom
2 lg cloves garlic
2 cups Trader Joe (Lundberg Farms short grain brown rice)
1 carton (32oz) low sodium chicken broth
2 Trader Joe Chicken Garlic sausages (precooked)
1 pinch saffron
1 pinch salt
1 tbsp basil
2 pinch salt
1/2 cup parmesan cheese
Directions
Saut�e garlic, onion and chopped mushroom together until onion is translucent and slightly beginning to brown around the edges. Add 2 cups brown rice, keep stirring until rice turns opaque. Add entire carton of chicken broth and chopped up sausages. Lower heat to medium. Add pinch of saffron, pinch of salt, and chopped basil. Stir frequently as it boils down. After an hour or so, rice will appear creamy. If the water begins to boil out and the rice isn't done, add just enough water to cover the rice and let it boil down again (just be sure to STIR). Continue to stir regularly. Total cooking time should be about 90 minutes. Serves 8-10.
