Introduction

Uses ready-made ingredients. Fast, easy and delicious hearty soup recipe with a kick. Tortillas dissolve, making the soup thick. I calculated using regular ingredients, but I strongly recommend using fresh salsa (fresh from store or home-made) vs canned, and low salt versions of the broth and seasoning. Ingredients

    -cooking spray
    -1c diced onions (about a medium onion)
    -1c diced carrots
    -8c chicken stock
    -8 plain, small corn tortillas (NOT tostadas/fried) (no more than 110 calories and not less than 2g of fiber for 2 tortillas; read label) chopped up
    -1 jar of salsa (no more than 125cal per jar; read label; likely a 12oz jar; I prefer Trader Joe's or Costco Garden Fresh Gourmet/Jack's fresh salsa or making my own using approx. 1.25c chopped tomatoes, 1/4c onion, 1/2 seeded jalapeno, 1 key lime, fresh cilantro)
    -12oz can black beans, rinsed
    -1 packet fajita or taco seasoning (OR 2T cumin, 2T chili powder, and cilantro to taste)
    -2c diced cooked chicken breasts

Directions

Spray soup pot with cooking spray or use a few drops of olive oil, saute carrots and onions for 3-4 minutes. Add chicken stock and chopped up tortillas. Bring to a boil, let cook for 20 minutes or until tortillas dissolve. Add salsa, rinsed beans, spices. Heat thoroughly. Add chicken. Makes 6 to 7 generous 2 cup servings. Can garnish with a tablespoon or two of 0% fat greek yogurt which will bump protein a little further, chopped green onions are great also.
