Introduction
This is a delicious and healthy way to eat your greens first thing in the morning. It's light (almost no added fat) but filling, and curry spices are very good for your gastric tract. Ingredients

Red Swiss Chard, 180 grams (6 oz.) - chopped
Egg, fresh, 4 large, beaten
Egg Beaters, 8 oz (liquid egg whites would be better)
*Coriander seed, .25 tsp
Mustard seed, yellow, .25 tsp
Curry powder, 1 tbsp
Turmeric, ground, .5 tsp
Cumin, ground, 1 tsp.
*Fresh Tomato, 1 oz - diced
*mushroom, fresh, 1 oz - sliced
*Garlic (1 Clove), diced
Orange Peel, 1 tsp (zest)
*Extra Virgin Olive Oil, 1/2 tsp.
salt & pepper to taste
Directions
Cut off chard stems & chop fine. Sautee curry & spices with EVOO and chard stems for 5 minutes. Add water as necessary to prevent burning. Add garlic & mushroom and tomato & cook for another 5 mins. Add chard and sautee until just wilted, then add all eggs and stir occasionally until eggs are set to your liking. I like mine really well done. Sprinkle additional curry powder, salt & pepper to taste. This makes 4 6 oz. servings - good size if you are having other items, or three 8 oz. servings - best if you are not having any side items.
