Introduction

Very Easy to make. Very Easy to make.
Number of Servings: 5

Ingredients

    1 lb carrots washed & chopped (leave skin on )
    1 medium washed potato with skin chopped
    1 medium onion
    1 oz butter
    2 pints chicken stock
    1 bayleaf
    1 tsp paprika
    1 tsp oregano

Directions

Melt butter & saute onion until clear. Add rest of vegetables & saute for 1 minute. Add 2 pints chicken stock & rest of ingredients. Bring to boil & simmer 1/2 hour or until tender. Remove bay leaf then blend the soup. Reheat & serve. You can add a little whipping cream at this point although it will increase calorie count.
