Ingredients

    1 medium yellow onion, sliced
    2 cloves garlic, minced
    2 large carrots, diced
    2 large sweet potatoes, peeled & diced
    15-oz. can chickpeas (garbanzo beans) drained & rinsed
    2 lb. boneless, skinless chicken breasts, chopped in to 2'-3' pieces
    1/2t. cumin
    1/2t. turmeric
    1/2t. cinnamon
    1/2t. black pepper
    14-1/2 oz. can chopped tomatoes

Directions

Makes 6 1-1/2c. servings.

Combine the first six ingredients in a slow cooker. In a small bowl, mix together the spices. Sprinkle over the food in the slow cooker. Add the chopped tomatoes.

Cover and cook on high for 4 hours.

    Incredible!
    I have been making this recipe (found on another website) for a couple of years and it is one of my absolute favorites. I have cut the chicken in half at times because my favorite part is the veggies. For a little kick add 1/2 tsp of curry powder and 1/2 tsp of cayenne. Wonderful! - 11/7/12

    Very Good
    I used chicken thighs and a mix of sweet and blue potatoes. I doubled the spices and used canned tomatoes with green chiles. I cooked it in the pressure cooker for 10 minutes at high pressure and let the pressure come down naturally. Served over couscous. - 2/13/12
