Ingredients

    4 oz pancetta, chopped
    2 cups chopped portabella mushrooms
    2 cups fresh mozzarella cheese, cubed (4 oz)
    1/2 cup oil-packed dried tomatoes
    2 eggs lightly beaten
    1/2 cup low sodium chicken broth
    2 cups soft bread crumbs
    1/2 cup Romano cheese, shredded
    2 cloves garlic, minced
    1 tsp. Italian seasoning
    1.5 pounds ground turkey
    4 oz. Italian sausage
    oregano

Directions

Preheat oven 350 degrees
In large skillet cooke pancetta until crips, remove from skillet and drain on papertowel, removing as much of fat as possible.
Cook mushrooms in 1 Tbsp. oil
2. For filling, in medium bowl combine pancetta, mushrooms, mozzarella and driet tomatoes. Set aside
3. In large bowl,mix eggs,, chicken broth. Add bread crumbs, romano cheese, garlic, italian seasoning. Add turkey and sausage.Mix well with hands.
4. On parchment paper, spread turkey so it is 9 X 15 rectangle. Sprinkle filling evenly over meat. Roll meat and place seam side down into15 x 10 x 1 inch pan.
5. Bake uncovered for 1 hour or until thermometer reads 160 degrees.
6. Remove and let stand for 10 minutes.
