Introduction

Dairy free rice pudding-makes a great substitute for those of us unable to eat the real deal. Makes a great porridge in the morning using leftover rice from the night before (cuts cooking time in half). Ingredients

    1 cup short grain or aborrio rice
    2 1/2 cups water
    2/3 cup almond milk or rice milk
    1/3 cup sugar or 1/4 cup agave syrup
    1 tsp. vanilla
    1/2 raisins and currents
    2 tbs or more cinnamon


Directions

1. In saucepan, bring rice and water to boil, cover and simmer for 15 minutes.
2. Add almond milk, sugar (agave syrup) vanilla and raisins. Bring to a boil and simmer until almost all the liquid has been absorbed. Sprinkle with cinnamon and serve.
