Ingredients

    2 Ripe Bananas, Mashed
    1/3 C. Low-Fat Buttermilk
    1/2 C. Brown Sugar, packed
    1/4 C. Light Margarine
    1/4 C. Egg Beaters (Equals 1 Large Egg)
    2 C. Whole Wheat Flour, Sifted
    1 Tsp Baking Powder
    1/2 Tsp Baking Soda
    1/2 Tsp Salt
    *Optional: 1/2 C. Pecans, Chopped (Not calculated in nutritional value but increases calories to 222.7 and fat to 7g/slice.)

Directions

Makes 16 Slices
1 Slice/Serving

Preheat oven to 350 and grease a loaf pan.
In a small bowl, mash bananas and mix w/ buttermilk and set aside. In a large bowl, cream together brown sugar and margarine until smooth. Add egg and beat until combined. Then add banana and buttermilk mixture and beat until combined. Next sift together dry ingredients and add all at once to the liquid ingredients and beat until combined. If adding pecans, gently mix them in now. Pour mixture into greased loaf pan and spread top to make even for consistent baking. Bake 50-60 min, until golden brown and a toothpick inserted in center comes out clean. Let rest in loaf pan for 5 min. Then remove from pan and let cool completely before slicing.

    Take that 1/2 that sugar and substitute applesauce and use 1percent milk and you cut the calories exponentially without compromising taste and moistness. - 2/23/13
