Number of Servings: 1

Ingredients

    4 oz Wild Salmon Fillet
    8 Brussel sprouts
    2 thin slices of a small onion
    3 wedges of a ripe tomato
    1 T Olive oil
    1 t lemon juice (can also add zest for more oomph)
    2 t Dried, Ground Oregano
    2 t Paprika
    1 t minced Garlic
    dash of salt and pepper

Directions

Preheat oven to 350 degrees

On a 10"x10" square of foil: dribble olive oil and lemon juice. Sprinkle half of all seasonings, place onion and garlic on foil. Put the fillet on top of the seasonings onion and garlic. Add other half of seasonings on top of the salmon. Add the tomato and sprouts. Wrap of the foil and place on a pan to catch any accidental drippage and put in oven. Bake 20-30 minutes until desired doneness.

Makes one serving. Goes great with a cup of brown rice.
