Introduction

I serve this with some brown rice or over blackened red snapper. Sometimes I add scallops also. I serve this with some brown rice or over blackened red snapper. Sometimes I add scallops also.

Ingredients

    1 TBSP EVOO
    1 large clove garlic, minced
    1/4 cup chopped onions
    1/2 cup chopped green peppers
    1/2 cup yellow pepper
    1/2 cup chopped celery
    1/2 tsp paprika
    1/2 tsp dried thyme
    1 1/2 tsp Creole seasoning
    1/2 tsp oregano
    1/2 tsp basil
    1 tsp worcestershire sauce
    1/4 hot sauce
    1/4 ground pepper
    1 can diced tomatoes
    2 cups Swanson's chicken broth
    1 8oz can tomato sauce

    1 14oz package medium raw shrimp peeled and deveined with tail off
    blackened seasoning

Directions

Sautee onions, peppers, garlic and celery in the EVOO till tender. Stir in diced tomatoes, add paprika, creole seasoning, thyme, oregano, basil, worcestershire, hot sauce, and ground pepper. Sautee for 1 minute longer. Add chicken stock and tomato sauce. Bring to a boil. Continue cooking uncovered for approximiately 10 minutes. Most of liquid will cook away.

In another pan spray with non stick spray and sautee shrimp with blackened seasoning till pink. Add to sauce.

Serves about 8-10 1/2 cup servings
