Introduction

This is really good, filling and fast. This is really good, filling and fast.
Number of Servings: 4

Ingredients

    8 oz of mushrooms stemmed and sliced thin
    1 10oz package frozen peas, thawed
    1/2 cup Sauterne cooking wine
    1 tsp onion powder
    1/2 tsp garlic powder
    1/2 tsp pepper
    2 tsp salt
    4 cups water
    I cup instant polenta
    3 Tbs grated Parmesan cheese

Directions

Spray skillet with nonstick spray and set over medium high heat. Add the mushrooms and cook until soft about 2 minutes. Add the peas and cook for 1 minute. Add the cooking wine and bring to a boil, cook until it reduces some, 1 minute.
Stir in pepper and 1 1/2 tsp of salt.

Meanwhile, in a sauce pan bring the water and 1/2 tsp salt to a boil. Add polenta in a stream then stir in parmesan.
Stir constantly until thick and creamy, about 5 minutes.
