This is a lovely side dish or compliment to any main dish either for lunch or dinner. It is also quite attractive on the plate. This dish is low in carbs and bad fat. Ingredients

1 good sized zuccini
1 large yellow squash
1/2 Sweet red bell pepper
1/2 Green bell pepper
1 small yellow onion
1/2 tsp sea salt
1/4 tsp black pepper
2 tbsp extra virgin olive oil
Directions
perpare all the vegitables by cleaning them and sliceing them using a julienne cut. the squash, peppers and onion should be in long strips maybe 1/4 inch thick or so.
Heat a large skillet and add the olive oil. Allow the oil to get hot but not smokey.
Add all the vegitables, the salt and pepper. Toss the mixture freequently allowing them to cook to an almost done state, just slighty al dente.
Serve immediately.
