    4 Chicken breast halves, skin/bone removed(approx 19oz total)
    1large jar (approx 3 cups) calorie reduced Pasta Sauce (Healthy Choice Chunky-italian style)
    1/3 cup Corn Flake Crumbs
    2 tbsp Grated Parmesan Cheese, separated
    2/3 cup Kraft Tex Mex Shredded Cheese


Preheat oven to 400

Lightly spray a frying pan with calorie free/reduced cooking spray and preheat over medium heat.

Combine cornflake crumbs with 1tbsp of parmesan cheese (salt/pepper to taste). Coat chicken breasts in this mixture and drop into frying pan. Brown each side of breast...approx. 3 mins per side.

Place browned chicken into a oval or round casserole dish. Pour pasta sauce over the chicken, covering entirely. Place in oven and bake UNCOVERED for 25 mins. Blend Tex Mex cheese and remaining tablespoon of parmesan cheese and sprinkle over baked chicken. Bake an additional 10 mins or until chicken is cooked through and cheese is bubbly.

Serves 6

~Serve alone or over 1/2 cup whole wheat pasta brown rice, or whole wheat couscous.~
