Introduction

This is an original recipe from Gena's fabulous website, www.choosingraw.com. I put it in here as it's a new favorite and will make life easier. The dressing has very little oil and a great amount of healthy fat. I tweaked the recipe for what I had on hand. This dressing tastes exactly like unhealthy poppyseed dressings, so good! Ingredients

    1 bulb fennel, sliced thinly
    1/2 of a large head of red cabbage, sliced thinly
    2 medium carrots, peeled and grated

    Dressing:
    2/3 cup raw cashews, toasted
    1/3 cup raw pine nuts, toasted
    2 Tb olive oil
    2 Tb soy milk
    1/2 cup water
    2 Tb apple cider vinegar
    2 Tb agave nectar
    2 Tb poppy seeds

Directions

Makes 8 side-salad servings with 2 Tb dressing each

1. Finely chop fennel and cabbage. Toss with grated carrot.
2. Toast nuts for a couple minutes in a dry pan. Cool.
3. Combine all salad dressing ingredients except for poppy seeds. Blend together. Stir in poppy seeds.
