Introduction

This is a sliceable bread, so it's great for sandwiches.

I'm trying to be specific with my recipes, since the ingredients are having a HUGE impact on calories. So 6:1 means six cups flour to one cup quinoa.

Number of Servings: 16

Ingredients

    6C unbleached, organic flour
    1C quinoa (dry)
    1.5t salt
    1T yeast
    water

Directions

1. Proof the yeast
2. Mix the dry ingredients
3. Add wet to dry, add water until it's a firm, slightly sticky ball.
4. Let rise in covered, warm bowl for 40 minutes
5. Knead WELL for 5 minutes, then either separate into 4 mini-loaves, or place in loaf pan
6. Let rise another 45 minutes
7. Put in pre-heated to 350 degree oven and bake for 40-45 minutes
8. Take out and let cook thoroughly before cutting (at least 20 minutes)

Yield is four mini-loaves or one bread loaf pan.

Service size is 1/4 mini-loaf or 1 slice of 16 from the loaf pan.
