Ingredients

    1 lb. boneless skinless chicken breast, cubed and browned
    5 cups water
    1/4 tsp. salt
    1 6oz. pkg. Uncle Ben's Wild Rice mix
    1 can cream of chicken soup (10.5oz.)
    1 1/2 cups skim milk
    8 oz. fat-free or low fat cream cheese
    10 oz. frozen chopped broccoli, thawed
    1 lg. carrot, shredded

Directions

Brown chicken in saucepan. Remove and keep warm. Combine water with rice mix and seasoning packet; bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add the soup, milk, cream cheese, and salt. Stir until cream cheese is melted. Add chicken, broccoli, and carrots an cook over medium-low heat until vegetables and rice are tender. Do not boil.

** I calculated this recipe with regular soup, light cream cheese (neufchatel) and skim milk. It works fine with light soup, regular cream cheese, 1% milk, etc. I've tried many variations!
