Introduction

I serve this over any pasta or wherever a creamy sauce is desired. I particularly enjoy it with my Ricotta Gnocchi (posted in my cookbook as well). I serve this over any pasta or wherever a creamy sauce is desired. I particularly enjoy it with my Ricotta Gnocchi (posted in my cookbook as well).

Ingredients

    2 tbsp butter
    2 cups diced onion (diced small)
    1/2 tsp granulated sugar (helps the onions carmelize)
    4 cups non fat milk
    1/4 cup cornstarch
    3 tbsp cold water
    2 tsp minced garlic or 1 tsp granulated garlic (to taste)
    salt and pepper to taste

Directions

Melt butter in pan. Add chopped onion and saute until translucent. Add granulated sugar which assists the onions in carmelizing. Continue to cook until onions are carmelized. Add garlic, salt and pepper and stir. Pour in milk, and heat through. Using immersion blender (or pour into blender), puree mixture. In a separate bowl, mix cornstarch and cold water and add to mixture over medium heat and allow to thicken to desired consistency.
