Introduction

Wheat free pancake! Sugar free too! I got this recipe from Stacey Lytle when we were doing a Great in 8 challenge.

She says: For your fruit for the morning, add fresh strawberries, blueberries, raspberries, etc. If you really need syrup, the best for you is Pure Maple Syrup. Delicious Way to Start your Day!

I also like 1/2 a banana mixed with 3/4 cup of berries--yummy! Another great substitute for syrup is non-fat yogurt. I like vanilla or a berry yogurt.

Ingredients

    1 cup uncooked whole-grain oats (non-instant)
    6 egg whites (you can use 3 whole eggs if you'd like)
    1 cup fat-free cottage cheese
    1/2 tsp vanilla
    1/2 tsp cinnamon
    (optional) 2 tsp sugar--if you must have it--but they truly are good without the sweetening added--not added into the calories

Directions

Add all ingredients in your blender and blend on medium speed until smooth (about 1 minute). Then pour onto hot griddle and cook until bubbly then flip over to cook until golden brown.
