Introduction

I use this to increase my veggies in my diet. Made with leftover greens (spinach, kale, Swiss chard) from a previous dinner. Great for breakfast or snacks, or on the go. Ingredients

    Swiss chard, a cup chopped, cooked
    2 fresh eggs
    1/4 cup nonfat milk
    1/2 cup breadcrumbs
    1/4 cup chopped onions
    1/4 cup shredded cheddar cheese
    1 tablespoon olive oil

Directions

ISet oven at 350 degrees. use a 6 muffin, 3 inch wide each muffin tin. Grease the pan, use Pam if available. Mix the other ingredients together in a small bowl. Divide evenly in the pan. Bake for 15 minutes. Will be golden on top.
