Ingredients

    1 1/2 cup all-purpose flour
    1 1/2 cup whole wheat flour
    1 cup packed brown sugar
    1/2 cup granulated sugar
    1 tsp salt
    1 tsp baking soda
    1 tsp ground cinnamon
    3 eggs
    1 cup applesauce
    1/4 cup vegetable oil
    1 tsp vanilla extract
    1 (8 oz) can crushed pineapple, drained
    2 cups mashed ripe bananas

Directions

1. In a large bowl, combine the flours, sugars, salt, baking soda and cinnamon. In another bowl, beat the eggs, oil and vanilla; add pineapple and bananas. Stir into dry ingredients just until moistened. Pour into greased mini muffin tins about 3/4 full.

2. Bake at 350 for 15 minutes or until toothpick comes out clean. Cool for a few minutes before removing from tins to wire racks.

Makes about 48 mini muffins or more depending on how much dough you place in each space.
