Ingredients

    2 cups spelt flour
    3 tsp baking powder
    1 1/2 cups egg whites
    1/2 cup puree apples (red only)
    1/8 tsp sea salt
    1 1/2 cup fresh blueberries (oven roasted 2 minutes at 400 degrees)
    1/4 tsp baking soda
    2 tbsp soy milk

Directions

roast blueberries for 2 minutes at 400 degrees
Mix all dry ingedients together
mix in egg whites and apple puree
add blueberries
add soy milk

use non-stick cooking spray or paper baking cups
pour mixture into muffin tins
bake at 390 degrees for 17 minutes
