Introduction

I LOVE Stir Fry, and use this as a base for many of my "made up" dishes (it is GREAT when you add scrambled eggs to it for breakfast,) it is easy to prepare ahead of time. can be used as is or marinated in your favorite marinade overnight . Ingredients

    2 cups sliced mushrooms
    1 med red pepper sliced
    1 med yellow pepper sliced
    1 small squash sliced
    1 small zucchini sliced
    1 small onion sliced

Directions

I like to have all these sliced and in the fridge until needed.
coat a pan with cooking spray and cook over med. heat until desired tenderness
