    12 medium length asparagus spears
    1 red bell pepper (any color will work though)
    1 onion (sweet onions work really well)
    .5 tbsp olive oil
    .25 tbsp balsamic vinegar
    2 tsp adobo spice


cut all veggies into bite size pieces. put in large bowl and mix with balsamic vinegar, olive oil and adobo spice. spread in a grill pan and cook on the grill for about 15 minutes or until desired tenderness.

makes approximately 4 1/2 cup servings.
