450 g blackberries
1/3 cup granulated Xylitol
1/2 teaspoon grated orange zest
1 3/4 cups white flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup unsweetened applesauce
½ cup white sugar or sugar substitute
1 Tbsp vegetable oil
1 egg substitute, made up as liquid
1 cup alpro soya yoghurt
1 lemon, juice and zest of
Directions
Preheat oven to 180˚C. Grease pudding bowl. Set aside.
Place berries, sugar and orange zest in a large bowl. Lightly toss until thoroughly combined. Spoon into the pudding bowl. Set aside.
Combine dry ingredients and set aside. Whisk together applesauce, oil, and sugar. Add egg and beat well, then stir in lemon zest and juice, mix in yoghurt. Alternately stir liquids into flour mixture in stages.
Cover berries with batter. Bake 20-25 minutes or until a knife inserted into the cake comes out clean.
