Ingredients

1 can Pinto Beans (drained)
1 can White Corn (drained)
1 can Black-eyed peas (drained)
1 small onion diced
1 cup celery - chopped
1-2 tbsp Jalapeno pepper chopped (seeded and deveined)
1 Red pepper chopped
1 Green pepper chopped
Dressing:
1 cup sugar (may reduce to 1/2 cup)
3/4 cup Cider Vinegar
1/3 cup vegatable oil
1/2 tsp pepper
1/2 tsp salt
Directions
combine the ingredients for the dressing and Wisk together (set aside while preparing the rest)
Combine all of the ingredients listed before the dressing. Wisk the dressing again and then pour over the vegetables. Toss well. Chill at least 2 hours before serving.
Serve as is with a slotted spoon as a side dish or with Frito scoops as an appetizer.
