Ingredients

1lb package of chicken breast
6 oz uncooked angel hair pasta
3 heads of broccoli (crowns only)
1 jar of sweet red peppers
1 cup of chicken broth (low sodium)
3 plum tomatoes
oregano
parmesan cheese, grated, about 1/4 cup
salt/pepper to taste
Directions
Pour 1 cup of chicken broth into large saucapan or skillet.
Cut 1lb of chicken breast or tenderloins into chunks and add to skillet. Sprinkle with oregano.
Cook over low/medium heat until no longer pink.
Pour 1/2 jar of sweet red pepper juice into skillet.
Add as many sweet red peppers, cut into chunks, as you like.
Cut up plum tomatoes and add to skillet.
In separate pan, bring to boil water and add 6 oz of angel hair pasta.
Cut crowns off 3 heads of broccoli, rinse, and add to skillet.
Pour remaining red pepper juice into skillet, and sprinkle with parmesan cheese.
When pasta is done, pour into serving dish, then pour contents of skillet over it and mix so juices cover pasts.
Serves 6 (small salad bowl size) or 4 (larger soup bowl size).
