Ingredients

    1 9 inch regular frozen pie crust (Hannafords Brand)
    1 cup of sliced onions (halved)
    1 cup frozen peppers
    1 tbsp land o lakes lite butter
    1 cup egg substitute
    1 tsp salt
    1/2 tsp pepper
    1/2 cup chicken broth
    1/4 cup skim milk
    2oz finely shredded part skim mozzerella

Directions

Preheat oven to 450. Poke holes in pie crust and put in oven for 5 minutes. Remove and set aside. Turn oven down to 350. In a sautee pan over medium heat add half the butter and give a few sprays of butter flavred cooking spray and onions and 1/2 the salt and pepper. Sautee until onions are cooked. (adding chicken broth as need to deglaze) remove onions and set aside. Add rest of butter to the pan and the peppers cook until peppers are cooked but still have a crunch. Add the onions back in and stir together and let cool.
In a mixing bowl add the eggs, cheese, salt, pepper and onion and pepper mixture. Stir together. Pour mixture into pie crust and bake for 35 to 40 minutes until cooked through. Remove let cool cut into 8 slices and Enjoy!!
